Day 66 Who’s Up For Tranche?! ;-)

We have been working on our Pate Feuilletee (Puff Pastry) since we have been back this term. Until Friday though everything has had a lid, which is great because when the pastry rises it is somehow tamed and controlled in where the rise can go. With the item on Friday it was our first time sans lid. I think it would be fair to say that there was a note of apprehension in the kitchen about how our Tranches would come out but these Puff Pastry cases came out looking pretty good for a first attempt! 🙂 Read the rest of this entry

Day 64 Exam Dishes Demonstration & A Sweet Terrine

I may have mentioned in some of my recent posts that the exams are looming on the horizon. We’ve been given our dates and the recent demonstrations have been filled with potential exam dishes; this morning was no exception. Of the 4 dishes on show, 3 are prospective dishes.
