Day 71 Puff Pastry & Gelatine Work

Friday was another full day of cooking ๐Ÿ™‚ In the morning we tried our hands at Vol-au-Vent a la Reine, which was served with a Roast Tomato Salad and Baby Corn & Mange Tout. For dessert we served up the 2 Parfaits from Thursday afternoons class. In the afternoon we continued our Frutti a la Vanille and took them home with us…just what I need, more double cream to eat on the weekend ๐Ÿ™‚ Read the rest of this entry


Day 70 – Awesome Dem & Productive Afternoon of Cooking

This mornings dem was all about Cold Preparations including Aspic. The majority of the food was really aimed towards a buffet serving but we also had the Rillettes of Rabbit where the dish is cooked and then stored in jars in the same way as you may store Confit of Duck Leg.
